Finely chop the cucumber, onion, and half of the tomatoes. Coarsely chop the remaining tomatoes
Blend the cucumber salad and water in a blender and strain. Transfer to a bowl and mix with the chopped cucumber, onion, cherry tomatoes, and olive oil
Arrange on a plate and finish with roughly chopped tomatoes, chives and olive oil
