Onion and red vinegar fried rice
Coarsely chop the onion and beat the eggs
Heat 1 tablespoon of scallion oil in a frying pan, pour the beaten eggs in all at once, and quickly add the rice
Use the back of a ladle to mix the rice and eggs until evenly combined
Stir fry while stirring the frying pan until the mixture is uniform, then add the roughly chopped onion, salt, and red vinegar and continue to stir fry
Season with pepper and finish by drizzling the aromatic oil over the rice to coat it
