Onion and red vinegar fried rice
Chop the onions roughly and melt the eggs.
Pour beaten eggs in a heated frying pan with 1 tablespoon of scallion oil and quickly add the rice.
Use the back of the ladle to mix the rice and eggs evenly.
Fry while stirring the frying pan, and once it's evenly, add the coarsely chopped onions, salt and red vinegar and stir-fry again.
Season with pepper, then pour in a balm oil to finish off, coat the rice and finish.
