Stir-fried bitter melon and pork with black beans
Remove the bitter melon cotton with a spoon and rub with salt. When it's soft, slice it into thin slices.
The pork is cut into small pieces and seasoned. Cut each vegetable into moderately sized pieces.
Heat 100cc of salad in a frying pan and let it run through oil.
Fry the condiments in a heated frying pan with 1 tablespoon of scallion oil. Once the aroma is starting to come out, add the vegetables from [2], pork, thinly sliced bitter melon, and [A] and fry.
Once the vegetables are all soft, add the mixed [B] and stir-fry.
When the soup is at a boil, fry over high heat to remove any moisture. Thicken it with water-soluble potato starch and pour in sesame oil and it's finished.
