Stir-fried bamboo shoots and pork

Rub the shredded pork loin with salt, soy sauce, and potato starch
Heat 1 tablespoon of salad oil in a frying pan and fry the pork from step 1. Once the pork is well browned, remove it from the pan
Heat 1 tablespoon of scallion oil in a frying pan again and fry the thinly sliced ginger and green onions. Once fragrant, add the bamboo shoots and continue frying
Add sake, Chinese soup, and the pork from [2] that you fried earlier to [3] and simmer until the bamboo shoots are saturated with the soup
When the soup has reduced by half, add (A) and stir-fry over high heat to evaporate the water
To finish, add sesame oil and chili oil for flavor, and garnish with green onions
