Natto soba

Place the dried soba noodles in a tray, pour in enough water to cover the noodles, and leave to soak for about 10 minutes. Then, place in boiling water and boil for about 3 minutes, then quickly cool in ice water and drain in a colander
Combine the bonito stock and Happomibijin in a bowl
Pour the soup from step 2 into a bowl and top with the boiled soba noodles. Chop the natto with a knife and place it on top of the soba noodles
Finish by topping with chopped green onions to taste
