Stir-fried bitter melon and pork
Half the bitter melon, remove the cotton inside, and slice it into thin slices about 2-3mm thick. Shake with salt and rub it, and when moisture comes out, rinse the salt off with running water and wipe off the water with kitchen paper.
Cut the pork loin into bite-sized pieces and transfer it to a bowl, add [A] and knead it to season it.
Put a frying pan with salad oil over high heat, add the pork loin and grill it. Once the browning is ready, add bitter melon and stir-fry again.
Once the bitter melon has softened, add sliced garlic, red chili peppers, and [B] seasonings. Once the whole thing is blending and the juice boils, add the thinly sliced onion.
When the onions are cooked and the juices start to simmer, pour in sesame oil and remove from the heat. Serve in a bowl and it's finished.
