Stir-fried bitter melon and pork
Cut the bitter melon in half, remove the pith, and slice into 2-3mm thick slices. Sprinkle salt on the melon and rub in the slices to release the moisture, then rinse off the salt under running water and pat dry with kitchen paper
Cut the pork loin into bite-sized pieces and transfer to a bowl. Add [A] and rub in to season
Heat salad oil in a frying pan over high heat, add the pork loin and fry. Once browned, add the bitter melon and continue to fry
Once the bitter melon has softened, add the sliced garlic, red chili pepper, and seasonings (B). Once everything is well combined and the liquid begins to boil, add the thinly sliced onion
Once the onions are cooked through and the sauce has thickened, drizzle with sesame oil and remove from the heat. Serve in a serving dish and it's done
