Chinese-style stewed winter melon and chicken wings
Peel the winter melon, cut it into blocks, and boil it in Chinese soup with kelp for about 30 minutes. Then leave at room temperature and cook with the residual heat.
Cut the chicken wings in half and place in a bowl. Add soy sauce and Shaoxing wine and rub together to season
Heat salad oil in a frying pan over high heat and fry the chicken wings. Once they are browned all over, add the seasonings (A)
Once boiling, cover and simmer for 2 minutes. Add the winter melon cut into bite-sized pieces, cover again and simmer until the sauce thickens
To finish, drizzle with sesame oil and remove from heat. Serve in a serving dish and top with thinly sliced peppers
