Chinese-style stew of winter melon and chicken wings

Winter melon has a mild taste, so it is recommended to cook it with chicken or pork. The key is to season the chicken wings thoroughly before cooking them.

Peel the winter melon, cut it into blocks, and boil it in Chinese soup with kelp for about 30 minutes. Then leave at room temperature and cook with the residual heat.

Cut the chicken wings into 1/2 and place in a bowl, add soy sauce and Shaoxing wine, knead them, and season them.

Place a frying pan with salad oil over high heat and grill the chicken wings. Once the whole thing is browned, add the seasonings [A].

Once it boils, cover and simmer for about 2 minutes. Add the bite-sized slices of winter melon, cover and simmer until the whole thing is thick.

To finish off, pour sesame oil on top and remove from the heat. Serve in a bowl and topped with shredded paprika.
