Mandarin orange rice

This unique rice dish lets you enjoy the sourness of mandarin oranges. It uses shio koji (salt koji) to season the pork, but if you don't have any, you can just rub it in with a little salt

How to make it

Soak the rice for about 30 minutes, then drain in a colander. Peel the mandarin oranges (leaving the thin skin intact) and blend them in a blender to make a juice. Cut the pork into bite-sized pieces, sprinkle with shio-koji, and rub in with your hands to season

Put rice, water, and mandarin orange juice into a clay pot and mix well

Place the pork from [2] on top of [3] and cook over high heat without a lid at first. Once it starts to boil, cover, reduce heat to low and cook for 8 minutes

Once cooked, mix thoroughly and sprinkle with mandarin peel to taste
