Rice with oranges
Soak the rice for about 30 minutes, then pour it into a colander and drain it. Peel the mandarin oranges outside (the thin skin remains), then place them in a blender to make juice. Cut the pork into bite-sized pieces, pour salted koji over it to knead it and season it with your hands.
Put rice, water and mandarin juice in a clay pot and mix well.
Place the pork from [2] on top of [3], first place it on high heat without covering it, then when it boils, cover it, turn it on low heat, and cook for 8 minutes.
Once cooked, mix gently and sprinkle the tangerine skin if desired to finish.
