Mandarin orange rice

How to make it

Soak the rice for about 30 minutes, then drain in a colander. Peel the mandarin oranges (leaving the thin skin intact) and blend them in a blender to make a juice. Cut the pork into bite-sized pieces, sprinkle with shio-koji, and rub in with your hands to season

Put rice, water, and mandarin orange juice into a clay pot and mix well

Place the pork from [2] on top of [3] and cook over high heat without a lid at first. Once it starts to boil, cover, reduce heat to low and cook for 8 minutes

Once cooked, mix thoroughly and sprinkle with mandarin peel to taste
