Western-style simmered winter melon

Prepare the stewed winter melon soup (see separate recipe).

Put the stewed winter melon soup, soup, and red miso in a pot, heat it, and simmer for about 5 minutes while melting the miso. The recommended amount of soup is to soak winter melon.

Add the meat sauce and simmer further. Once the juice fades and the sauce blends in all the way, pour in olive oil.

Remove from the heat and serve in a bowl. Topped with Parmesan cheese and Italian parsley if desired.
