What are clams?

Hamaguri is a bivalve that lives on the beach and is harvested in large quantities in Japan and Korea. As domestic clam production is declining, imports from Korea are increasing. Because of their chestnut-like shape, they are also called "beach chestnuts."

Seasonality and how to choose

Clams are considered to be in season in early spring, but in fact they taste better from autumn through winter. The key to choosing them is to choose ones with shiny shells that feel heavy. Pick up each one and lightly tap the shells together; fresh ones will have a firm, clear sound, so use that as a guide to choosing them

Recommended way to eat it

1. Grilled clams

It is common to grill clams in their shells. To prevent the delicious juices from spilling out, it is a good idea to cut off the protrusions on the shell with a knife before grilling

2. Sake Steamed

Steaming clams in sake brings out their unique flavor. It's a simple yet deep-flavored dish

3. Clam chowder

Cream stew and clam chowder are also popular dishes made with clams, and are characterized by their rich soup

Recipe: Clam Chowder

Ingredients (serves 4)

  • Clams (shelled): 150g
  • 1 small onion
  • 1 slice of bacon
  • 1 potato
  • Soup (1 solid soup base + water)
  • Milk: 1 cup
  • Parsley (chopped): a little
  • Salt, salad oil, flour, pepper

How to make it

  1. Wash the clams in water with a little salt added and drain well
  2. Cut the onion, bacon, and potato into 1cm cubes
  3. Heat oil in a heavy-bottomed pot and fry the onions. Once they are soft, add the flour and fry lightly
  4. Add the hot soup and once it boils, skim off the scum
  5. Add salt, pepper, bacon, and potatoes and bring to a boil. Add clams and simmer for a few minutes, then add milk and heat. Finally, sprinkle with parsley
