Don't let the flavor of the meat go away! Tips for making juicy hamburger

What is a hamburger steak? Discover the secrets of this meat dish loved around the world

Hamburgers are a dish made by kneading and grilling minced meat, and are popular all over the world. They are said to have originated in Hamburg, Germany around the 18th century, and are based on the steak tartare of that time. They then spread from Germany to other parts of Europe, and even made their way to America

It was introduced to Japan during the Meiji period and was initially called "hamburg steak," but the name "hamburger steak" became established from the Taisho to Showa periods. After the war, it came to be called "hamburger steak," and has become firmly established on Japanese dining tables as a representative Western dish

The appeal of hamburgers is undoubtedly the concentrated flavor of the meat. By mixing minced meat with vegetables such as onions, breadcrumbs, and seasonings, the hamburger becomes even more tender and juicy. Another appealing feature is that you can enjoy a variety of flavors by changing the type of sauce

Tips for making juicy hamburgers

There are a few tips for making delicious hamburger steaks. First, we recommend using a mix of ground beef and pork. The flavor of the beef and the fat content of the pork are a perfect match, resulting in a juicy steak

Also, chop the onions finely and fry them in butter to bring out their sweetness. This will add depth to the flavor of the hamburger steak. Mixing breadcrumbs and milk together before adding to the meat mixture will give the steak a fluffy texture

When mixing the meat mixture, it is important to knead it thoroughly until it becomes sticky. This will help seal in the juices and prevent cracks while cooking. When shaping the meat, make a depression in the center to prevent uneven cooking and ensure even cooking

When grilling, brown the surface over high heat, then cook slowly over low heat. If the meat juices start to overflow during cooking, cover and steam to make it even juicier

Classic Juicy Hamburger Steak Recipe

Here is a recipe for juicy hamburger steak with plenty of meat juice. The ingredients and steps are as follows:

Ingredients (for 2 people)

  • 200g ground beef
  • 1/4 onion (50g)
  • 5g butter
  • 1/2 tablespoon salad oil

Ingredients for the meat filling

  • 3 tablespoons breadcrumbs
  • 3 tablespoons milk
  • 1/3 teaspoon salt
  • Black pepper to taste

Sauce Ingredients

  • 1 tablespoon sake
  • 2 tablespoons tomato ketchup
  • 2 tablespoons Worcestershire sauce
  • 10g butter

How to make it

  1. Place the breadcrumbs and milk in a bowl and mix well
  2. Finely chop the onion and place it in a heat-resistant container with the butter and cover with plastic wrap. Heat in the microwave (600W) for 1 minute, stir gently and let cool.
*Tip: If you place the butter on top of the onion and then cover with plastic wrap, be careful as the melted butter may melt the plastic wrap.
  3. Add the remaining ingredients for the meat mixture, the ground beef, and the onion from step 2 to the bowl from step 1 and mix in a constant direction until sticky.
    * Tip: Mixing while removing the air will prevent cracks during cooking and will help seal in the juices.
  4. Divide the meat mixture into two equal parts and shape them into ovals. Lightly indent the center.
    * Tip: Wet your hands with water or oil to prevent the meat mixture from sticking.
  5. Heat salad oil in a frying pan, add the meat and cook until browned on both sides (about 2 minutes per side). Cover and steam-cook over low heat for about 7-8 minutes, then remove from the frying pan.
*Tip: Be careful not to touch the meat too much when you start cooking, as this may cause it to crack.
  6. In the same frying pan, add the sauce ingredients (except the butter) and heat over medium heat until boiling. Simmer for about 1 minute, then turn off the heat and add the butter and let it melt
  7. Place the hamburger on a plate and top with the sauce

Mixing breadcrumbs and milk gives it a fluffy and juicy texture. The sweetness of butter-fried onions adds depth to the flavor. Mixing the meat thoroughly seals in the juices, making it even more delicious
