Scallions and green onions dressed in vinegar and miso

Ingredients (4 servings, approximately 130kcal/serving)

  • Scallions: 100g
  • Green goat: 100g
  • Vinegared miso (miso paste, vinegar, and beaten mustard): 5 tablespoons

How to make it

  1. Preparing the green onions: Boil the green onions long, root-side up, in boiling water with a little salt. Once the leaves are fully submerged, boil until cooked to your liking, then remove to a colander and fan with a fan to quickly cool.
  2. Preparing the scallions: Place the scallions horizontally on a cutting board with the leaf tips facing to the right. Squeeze the scallions from left to right with the tip of a knife to remove the slime, then cut them into 2cm lengths. Then, squeeze out all the water.
  3. Preparing the green onion: Place the green onion in a colander and rinse lightly, then dip it in boiling water. Transfer to cold water, drain, and sprinkle with a little vinegar.
