Christmas Reese Pie (Full Version, Serves 4-5)

- 300g minced pork
- 2 tablespoons Parmesan cheese + extra for topping
- 1 clove garlic (grated)
- 1 tablespoon fresh parsley (chopped)
- 20g breadcrumbs
- 1.5 tablespoons milk
- 1/2 egg
- 20g frozen green peas (thawed)
- 20g frozen corn (thawed)
- Black pepper to taste
- 1/4 teaspoon salt

- 1 sheet (375g) of frozen pie dough (whole wheat flour recommended)
- 1/2 egg (for glazing)
- 1/2 teaspoon mustard
- 1 sprig of fresh rosemary
- 2-3 bay leaves
- Olive oil (as needed)
How to make it
1. Preparation: Preheat the oven to 180°C. Thaw the green peas and corn, then dry them thoroughly with kitchen paper.
2. Make the filling: In a large bowl, mix 300g of ground pork, 2 tablespoons of Parmesan cheese, 1 clove of grated garlic, 1 tablespoon of chopped parsley, 20g of breadcrumbs, 1.5 tablespoons of milk, 1/2 an egg, and 1/4 teaspoon of salt until sticky. Finally, add 20g of green peas and 20g of corn, mix lightly, and season with black pepper.

3. Preparing the pie crust and shaping the wreaths: Lightly roll out one thawed sheet of pie dough into a square. Draw an 8cm diameter circle in the center (you don't actually need to cut it out), and make 8 radial cuts from the circle as the center. Place the filling in a donut shape and arrange the doughnuts.

4. Shaping and decorating into a wreath shapeCut each of the 8 equal pieces of pie dough into the center and carefully fold it to enclose the filling and potatoes. Lightly overlap the edges of adjacent pieces of dough to seal and create a beautiful wreath shape. Adjust the shape so that the hole in the center is about 6 cm in diameter.

5. To finish , carefully brush the entire surface of the pie with a glaze made by thoroughly mixing 1/2 egg and 1/2 teaspoon mustard. Decorate the wreath beautifully with 1 sprig of rosemary and 2-3 bay leaves lightly coated with olive oil, and sprinkle Parmesan cheese on top if desired.
6. Bake in a preheated oven at 180°C for 25-30 minutes, or until golden brown. If the surface is too browned in the first 15 minutes, lightly cover with aluminum foil to adjust the browning.
Cooking Tips
If the potato slices are too thin they will crumble, but if they are too thick they will not cook properly, so 5mm is ideal. Allowing the parboiled potatoes to cool completely before slicing will help them maintain their shape. When wrapping the potatoes in the pie crust, it is important to fold them carefully so they do not slip. Also, draining the green peas and corn thoroughly will prevent the finished product from being watery.
