Introduction of materials

<Milk Breadcrumbs>

Milk breadcrumbs are a mixture of fresh breadcrumbs and milk. These milk breadcrumbs are the secret to the plump and juicy texture of hamburger steaks. Fresh breadcrumbs have more moisture than dry breadcrumbs, so they absorb the juices of the meat well and make the steak fluffy when cooked

<Meat, huh?>

Using ground beef creates a good balance between the umami of the beef and the fat of the pork. Adding onions adds sweetness, and the egg acts as a binder. Pepper adds an accent and enhances the overall flavor

Classic hamburger recipe

Ingredients (for 2 people)

  • Ground beef...1 pack (approx. 250g)
  • Salt...1/4 teaspoon
  • Milk breadcrumbs
    • 1/2 cup fresh breadcrumbs
    • Milk...2 tablespoons
  • 1/2 onion (about 100g)
  • Egg (small size)...1 egg (40g net weight)
  • Pepper...a little
  • Tomato ketchup...3 tablespoons
  • Red wine...3 tablespoons
  • Medium-thick sauce...1 tablespoon
  • Butter...10g
  • Your favorite boiled vegetables (broccoli, green beans, etc.)...as needed
  • Salad oil

How to make it

Preparation

  1. Finely chop the onion and heat 1/2 tablespoon of salad oil in a frying pan over medium heat, then fry the onion for about 3 minutes. Once soft, remove from the pan and let it cool
  2. Pour milk over the breadcrumbs and mix, leaving them to soften until just before use
  3. Line a 20x25cm baking tray with plastic wrap

Mix the minced meat and salt

Put the minced meat and salt into a large bowl and mix with your fingertips. It's ready when it comes together. Mixing just the meat and salt first before mixing all the meat and seasonings will help make the minced meat more sticky

Add ingredients and make the batter

Add the milk breadcrumbs, onion, egg, and pepper and mix until evenly mixed. Use your hands to mix vigorously until the mixture becomes sticky

Remove air and shape

Take half of the dough in your hand, lightly roll it into balls, and smack it against your palm to remove any air bubbles. Flatten it and place it on a baking tray lined with plastic wrap. Shape it into an oval about 14cm long. Do the same with the rest

Grilled in a frying pan

Heat 1/2 tablespoon of salad oil in a frying pan over medium heat, take the seeds in your hands, and place them in the pan. Cook for 2 to 2.5 minutes, and when golden brown, flip them over

Steam and bake

Cover, reduce heat to low, and steam for about 6 minutes. The rice will be cooked through when it has shrunk and become a little smaller, and plump and thick. Remove from the heat and serve on a plate

Make and finish the sauce

Wipe off any remaining fat from the frying pan, add the tomato ketchup, red wine, medium-thick sauce, and butter, and bring to a boil over medium heat for about 1 minute while stirring. Pour over the hamburger steak and garnish with your favorite boiled vegetables to finish
