Clams are bivalves that live on beaches and are often found in Japan and Korea. As domestic clams are on a downward trend, imports from Korea are increasing. Because it is shaped like a crepe, it is also known as "shoulder chestnuts of the beach."

Seasonality and how to choose

Clams are considered to be seasonal in early spring, but in fact, the flavor is better from autumn to winter. The key to choosing one is to choose one that has a glossy shell and feels heavy. Take each one at a time and lightly discuss the shells together, and fresh ones will make a firm, clear sound, so try choosing one as a guide.

Recommended ways to eat

1. Grilled clams

The standard is to grill clams in their shells. It is a good idea to remove the shell protrusions with a knife before baking to prevent the delicious soup from spilling out.

2. Steamed sake

Steaming the clams with sake brings out the unique flavor. It's a simple yet deep way to enjoy the flavor.

3. Clam Chowder

Cream stew and clam chowder are also classic dishes made with clams. It features a rich soup.

Recipe: Clam Chowder

Ingredients (serves 4)

  • Clams (peeled): 150g
  • Onion (small): 1 pc
  • Bacon: 1 piece
  • Potatoes: 1
  • Soup (1 solid soup base + water)
  • Milk: 1 cup
  • Parsley (chopped): a little
  • Salt, salad oil, flour, pepper

How to make it

  1. Wash clams with water with a little salt and drain well.
  2. Cut the onion, bacon and potatoes into 1cm cubes.
  3. Heat the oil in a thick pan and fry the onions. Once it's soft, add flour and lightly stir-fry.
  4. Add the warmed soup and remove any scum once it boils.
  5. Add salt, pepper, bacon and potatoes and simmer. Add the clams and simmer for a few minutes, then add milk and warm. Finally, sprinkle some parsley.
