Christmas is fast approaching and the cold weather is starting to set in. Today, I'd like to introduce you to roast pork made with pork shoulder loin

Pork shoulder loin has a good balance of fat and meat, and by cooking it, you can bring out its rich flavor. By slowly cooking it over time, the surface of the meat will be fragrantly browned, and the inside will be tender and full of juices

By simmering it together with standard vegetables such as onion, garlic, and celery, the umami of the meat and the sweetness of the vegetables are perfectly balanced, creating a gentle texture and a heartwarming atmosphere

Another appealing feature is that the cooking method makes the most of the individuality of the ingredients, resulting in a homely, warm dish

Recipes

Now, let me introduce you to the recipe

Ingredients (for 4 people)

  • Pork shoulder loin: 1000g
  • White wine: 400ml
  • Onions: 2 pcs
  • Garlic: 1 clove
  • Celery: 2 stalks
  • Mushroom: 1
  • Bouquet garni: 1
  • Olive oil: 2 tablespoons
  • Water: Appropriate amount
  • Seasonings: salt, pepper

How to make it

  1. Wash the pork shoulder loin under running water, wipe it dry, and sprinkle salt and pepper all over
  2. Preheat the oven to 180°C. Spread olive oil on an oven tray and place the meat on it
  3. Bake over high heat for about 20 minutes until the meat is browned
  4. Sauté the onion, garlic, and celery in a pot, add the white wine, and bring to a boil
  5. Transfer the cooked meat to a pot with vegetables and simmer over low heat for about 2 hours, until the meat is cooked through
  6. Add the mushrooms and bouquet garni, add water and simmer for about an hour
  7. Once the meat is cooked through and the vegetables are tender, season with salt and pepper
  8. Add olive oil to finish and mix well
  9. Serve warm on a plate and serve with bread or salad, if desired

By browning the pork shoulder and then slowly simmering it, the flavor of the meat and the sweetness of the vegetables come together perfectly

Any leftover meat can be stored as a prepared side dish or used as a side dish in your lunch box
