material

  • Green peas (with pods): 600g
  • Peeled shrimp: 200g
  • Dashi: 2 cups
  • Seasonings: salt, sugar, mirin, light soy sauce

procedure

  1. Remove the green peas from the pods, wash them and boil them in boiling water until soft
  2. Remove the shrimp's back vein
  3. Add the stock to a pot and bring to a boil, then add the shrimp and simmer for 1-2 minutes
  4. Season to taste and add the green peas
  5. Once boiling, pour in the beaten eggs and steam until done

Stir-fried green peas and peeled shrimp

This stir-fry dish of green peas and peeled shrimp is made with Chinese-style soup base to bring out its richness and flavor

material

  • Green peas: 2 cups
  • Peeled shrimp: 200g
  • Soup (Chinese soup base + water): 1 cup
  • Seasonings: salt, sake, potato starch, salad oil, sugar

procedure

  1. Remove the green peas from the pods, wash them, and boil them in boiling water with salt and baking soda until soft
  2. Once cooked, transfer to a bowl along with the cooking water and add water little by little to cool
  3. Put water and sugar in a saucepan and bring to a boil until the sugar has completely dissolved, then let it cool
  4. Soak the green peas in the syrup (3) and leave for 2-3 hours to allow the flavor to soak in
  5. Heat oil in a frying pan and fry the green onions and boiled green peas
  6. Add the shrimp, broth, sake, salt and sugar, bring to a boil and thicken

Stir-fried green peas

This is a simple recipe where green peas are sprinkled with salt, boiled, and then stir-fried with green onions and shrimp

procedure

  1. Sprinkle salt on the green peas and boil them. Cut the green onions diagonally into 1cm wide pieces
  2. Sprinkle salt on the shrimp, wash them, and coat them with sake and potato starch
  3. Heat oil in a wok, quickly fry the shrimp and remove from the pan
  4. Add oil to the same pan and fry the green onions and boiled green peas
  5. Add the shrimp back in and

Add the rice flour, sake, salt, and sugar and bring to a boil. Dissolve the potato starch in the water to thicken the sauce and it's done
