From Italian to Japanese cuisine, enjoy the charm of mushrooms to the fullest
There are many different ways to enjoy mushroom dishes. This time we will introduce a wide variety of dishes, from Chef Kataoka Mamoru's authentic Italian cuisine, to Chef Tamura Takashi's delicate Japanese cuisine, and Chef Wakiya Tomoyuki's Chinese cuisine.
1. Pasta with lots of mushrooms
This dish uses several different types of mushrooms, allowing you to enjoy different textures. Chef Kataoka's key to this dish is to fry the mushrooms thoroughly, pressing them against the frying pan. This concentrates the umami of the mushrooms, resulting in a deep flavor. The seasoning is simple, allowing the natural flavor of the mushrooms to shine through.
2. Maitake mushrooms and tilefish baked in foil
The moment you open the foil, the rich aroma of butter and white wine fills the air. The elegant combination of maitake mushrooms and tilefish is perfect for entertaining in the fall. By sealing the foil tightly, you can steam the ingredients without losing their flavor.
3. Black truffle and mushroom risotto
This luxurious risotto uses five different kinds of mushrooms. The trick is to fry the mushrooms by pressing them with a spatula. The risotto is slowly cooked for 18 minutes, bringing out the aroma of black truffles and creating an exceptional flavor. Add the bouillon little by little until it's cooked to the perfect consistency.
4. Salted salmon and mushroom rice in a clay pot
A hearty dish of buttery rice topped with sautéed salted salmon and mushrooms. Adding the ingredients to freshly cooked rice instantly brightens up your dinner table.
5. Mushroom rice
Chef Tamura teaches how to make mushroom rice. The key is to air-fry the mushrooms to remove the moisture before cooking. This prevents the rice from becoming watery and allows the mushroom aroma to really shine through. The finishing touch of yuzu peel further enhances the autumn flavor.
Mushrooms you can enjoy at home
You can also incorporate authentic mushrooms into your cooking at home. For example, porcini mushrooms are not often seen in Japanese supermarkets, but there are actually many imported varieties available. You can soak them in water and use the soaking water as a secret ingredient in pasta or stir-fries.
Both are luxurious ingredients perfect for the autumn season. Take this opportunity to enjoy the authentic aroma and flavor in the comfort of your own home.
Tips for choosing mushrooms
The recipe calls for a variety of mushrooms, but you can substitute them with whatever you have at home or that are easy to find. However, combining several types creates a synergistic effect of different textures and umami flavors, so try to use two or three types if possible.
The crunchy texture of maitake, the smoothness of shimeji, the firmness of king oyster mushrooms, and the aroma of shiitake...the unique characteristics of each mushroom combine to give mushroom dishes a deeper flavor.
Why not brighten up your dinner table with a dish packed with mushrooms on a long autumn night?
