Italian flavor of shrimp mayo

Sprinkle the shelled shrimp with lemon juice (1 tablespoon) and white wine, place in a silicone steamer and heat in the microwave (600W) for 5 minutes.
Transfer the shrimp together with the juice into a bowl. Pour the bowl in ice water to cool, then peel the shell.
Pour the fresh cream and brandy on ice water, whisk in a whisk until it is about mayonnaise hard, and combine with A.
Add the shrimp, mix, serve it on a plate with romaine lettuce, sprinkle with parsley and get it ready.
