Simmered saury in soy sauce
Heat 1 tablespoon of scallion oil in a frying pan and fry the white onion, garlic, ginger, bamboo shoots, and shiitake mushrooms

Add (A) and the confit, drained on paper towels, cover and simmer for about 3 minutes
Once the soy sauce has thickened, add water-dissolved potato starch to thicken the sauce. To finish, add sesame oil and scallion oil for flavor, and garnish with green onions
