Caramel sauce

How to make a bittersweet caramel sauce. If you don't like bitterness, turn off the heat when it reaches your desired golden brown color. This refers to cane sugar. If you don't have cane sugar, regular granulated sugar will also work

Combine granulated sugar, cane sugar, and 30cc of water in a pot and heat over medium heat

As you continue to heat the pot while shaking it, small bubbles will begin to form and the color will begin to darken

Cook until the bubbles start to grow larger, the color changes from golden brown to brown, and smoke starts to rise

Once the mixture starts to smoke, add 50cc of water, stir well and check the consistency. If it is not thick enough, turn the heat to low and thicken it

Once it has reached your desired consistency, place the pot in ice water to cool. Stir well to prevent it from solidifying, then add rum for flavoring and it's done
