Mixed sushi with bitter melon and tuna
Mixing hot rice with ingredients can cause food poisoning, so make sure to use cooled rice
How to make it

Cut the bitter melon into slices about 1mm thick, place in a bowl and mix with sugar to remove moisture

Squeeze out the water from the bitter melon, add the tuna, Happomibijin and roughly chopped pickled ginger and mix

Add the cooled rice and mix well

Serve in a bowl and it's finished.
