Shrimp nigiri sushi
Wash the shrimp thoroughly under running water without peeling the shells. Insert a bamboo skewer into the vein to remove the back vein, then insert the bamboo skewer vertically to secure it in place
Boil the shrimp in boiling water for about 2 minutes. Once the shrimp are cooked through, remove the skewers while they are still hot and peel the shells
Make a slit in the belly of the shrimp with a knife and spread it so that the tail stands up
Shape a small amount of vinegared rice into a ball with your hands and use the opened shrimp (3) to make nigiri sushi
Arrange the shrimp with the tails standing up so that they look like they are jumping, and top with a little wasabi to finish
