Tomato cold noodles

Add all the ingredients for the cold tomato noodles sauce in a bowl and mix.

Boil the Chinese noodles, lightly wash away any slimy skins with running water, then pour in ice water to simmer. The boiling time is adjusted according to the thickness of the noodles.

Place the Chinese noodles in a bowl and sprinkle the tomatoes into cubes and the peeled and cubed cucumbers.

Topped with watercress if desired and served with a tomato cold noodles sauce.
