Horse meat salad
Lightly roast the horse meat to add a flavour. This is a carpaccio-style finish.
How to make it

Remove the muscle and fat parts of the horse meat and slice it thinly against the fiber.

Place baby leaves in a bowl and place horse meat lightly grilled on both sides with a net.

Fill in white wine sauce and finish.
