Pork marinated in pineapple miso
Lightly score the fatty side of the pork loin with a knife
Soak in a mixture of mirin and soy sauce for a few minutes
Marinate pineapple in miso sauce overnight
After marinating overnight, cook slowly in a frying pan over low heat without adding any oil
Once one side is browned, cook the other side in the same way, and once cooked through, remove from the oven and cut into bite-sized pieces
In the same frying pan, heat peanut oil (sesame oil can also be used), add a little salt and quickly fry the pea sprouts
Finish by adding the stir fried pea sprouts to the pork
