Salt-a-sided beauty
Shio Happo Mibijin can be stored in the refrigerator for about a week.
Put sake and mirin in a pot, turn on the heat, and boil. (After a few minutes, when the white foam disappears, it means the alcohol has evaporated.)
Add the garlic (lightly crushed with a knife), bonito flakes, and salt to the pot (1) and bring to a boil, then turn off the heat and let cool
Once cooled, strain the mixture by squeezing it tightly with a cloth
