The pectin in pineapple contains enzymes that break down proteins, so marinating meat in it makes it incredibly tender. Even if you marinate chicken overnight, it will be so tender you can tear it apart with chopsticks the next day. However, be careful not to add too much pineapple, as it will have a Hawaiian flavor
