Pineapple miso pickled

Pectin contained in pineapple contains enzymes that break down proteins, and when you soak meat in it, it becomes extremely tender. Even if you just marinate chicken overnight, it will be so tender that you can tear it with chopsticks the next day. However, be careful not to use too much pineapple, as it will give you a Hawaiian flavor.
