Famous varieties include "Hiratanenashi" and "Tonewase." Astringent persimmons sold at supermarkets have already been de-astringented, so they are safe to eat.

Choose one with four stems tightly packed together, with as much green as possible remaining. A good quality fruit is one that is a deep orange color, shiny, and feels heavy in your hand. It's also important to choose one that is evenly shaped.
