Cut the bitter melon in half lengthwise, remove the pith with a spoon, and rub in salt. Once softened, slice thinly into a (V) shape
Sprinkle potato starch on the surface of the bitter melon and sandwich the seasoned beef inside
Coat with a moderate amount of basic batter and fry in hot oil until crispy on the outside
