The key is to cut bitter melons once and then cut off the second time. When opened, it will turn into a shape of [V], so you can place the beef in between to prevent it from falling off.

How to make it

Cut the bitter melon in half lengthwise, remove the cotton with a spoon, and rub it with salt. When it becomes soft, slice it thinly into the (V) shape.

Sprinkle the surface of the bitter melon with potato starch and sandwich the seasoned beef.

Sprinkle an appropriate amount of basic batter and fry it with hot oil until the surface is crispy and you're done.
