Saury Confit

"Confit" is a French cooking method in which it is boiled in oil rather than grilling. Adding sansho pepper and orange peels enhances the Chinese flavor. It lasts in the fridge for about a week.

How to make it

Rub 1 tablespoon of salt into the washed saury to remove the odor.

If the saury comes out of the saury, wipe it off thoroughly with paper and cut it into pieces in about three equal parts.

Mix the <A> seasonings into a pot and add the chopped saury.

Simmer about 30 pieces over low heat and it's finished. It can be used in a variety of dishes.
