Ume Sanbai Vinegar
Put sake and umeboshi with seeds in a pot, then cook them while crushing the plums with chopsticks, and then skim off the alcohol.
Once the alcohol is gone, add sansho pepper and bonito shaved flakes. After simmering for 1-2 minutes, turn off the heat and strain.
Once it cools it's finished.
