Soy milk almond tofu
Blend the apricot kernels and 200cc of water in a blender (enough to break the kernels down a little)
In a pot, mix the ingredients in (1) and (A)
Heat over low heat without boiling
Once the granulated sugar and gelatin have dissolved, remove the apricot kernels using a colander and pour into a tray
Chill in the refrigerator until set. Serve with mint, if desired
