Steamed oysters in sake

Insert a knife into the oyster shell, open the shell and remove the flesh.
Wash the flesh and shells thoroughly with running water and remove any water.

Return the oyster flesh to its shell, sprinkle 2 tablespoons of sake all over, and place in the steamer. Steam for 2 minutes, then place the sliced serum stems on top, and steam for another minute.

Serve it on a plate and serve with lemon and complete it.
