I used commercially available persimmon seeds (with peanuts). I separated the persimmon seeds from the peanuts, put the persimmon seeds in a plastic bag, and crushed them into powder

Lightly coat the whitebait in flour, dip each one in the beaten egg, and then coat with the persimmon seed powder (1)

Place in frying oil heated to 165°C and fry for 2-3 minutes

Remove to a wire rack to drain the oil, then place in a serving dish. Garnish with the peanuts (1) and serve
