Mini carrots pickled in miso
This dish allows you to enjoy the simple and rustic taste of carrots. If you don't have mini carrots, you can make it by cutting regular carrots into long, thin strips so that the miso can penetrate more easily
How to make it

Wash the mini carrots, wipe off the moisture with paper towels, and peel them with a peeler

Marinate in plenty of Shinshu miso and let sit overnight

Remove any excess miso and serve on a plate
