Freshly simmered winter melon
Cut off both stems of the winter melon and split it in half lengthwise. Cut it into wedges and remove the seeds and skin. Place the winter melon in boiling water with salt (not included in the recipe) and parboil for about 20 minutes
Put A and winter melon into a frying pan and heat. Once boiling, cover with aluminum foil and simmer for about 10 minutes
Remove the grilled eel from the skewer and place it in a frying pan. Add the eel sauce provided and gently turn the winter melon over to coat it evenly
Once boiling, transfer to a plate and garnish with sweet and sour ginger, if desired
