Freshly boiled winter melon

Cut off both stems of winter melon and split them in two vertically. Cut into combs and remove seeds and skin. Place the winter melon in hot water with salt in excess of salt and boil it for about 20 minutes.

Put A and winter melon in a frying pan and heat it. Once it boils, place a lid on with aluminum foil and simmer for about 10 minutes.

Remove the grilled eel from the skewers and place in a frying pan. Add the included eel sauce and gently turn the winter melon over and mix the sauce all over.

Once it is brought to a boil, place on a plate and serve with sweet and sour ginger if desired.
