Bitter melon stir-fried with minced meat
Prepare the stuffing mixture (see separate recipe)
Cut the bitter melon in half, remove the pith, and slice into 1-2mm thick slices. Sprinkle salt on the melon and rub in the slices to release the moisture, then rinse off the salt under running water and pat dry with kitchen paper
Heat a frying pan with salad oil over high heat, add the meat filling and fry while breaking it up with a spatula
Add the seasonings (A) and when it starts to boil down, add the bitter melon and continue to stir fry
Finish by drizzling sesame oil over the dish and removing from heat
Serve in a bowl and it's finished.
