Whale sushi rolls

Depending on the part of the whale, it can be a little difficult to chew, so if you are using it for sushi rolls, it is easier to eat if you first pound it into sushi rolls. Enjoy with soy sauce or Happomibijin, depending on your preference

How to make it

Both the red and white parts of the whale are pounded into tataki. They are thinly sliced, then cut into strips, and pounded to make a smooth dish

Make the egg mince. Mix eggs, light soy sauce, and sugar in a frying pan and heat over low heat. Stir with chopsticks while cooking until minced. Once the mixture has solidified, remove from heat and place the frying pan in ice water to cool

Spread roasted seaweed on a rolling mat, spread vinegared rice on the bottom half, top with shiso leaves, minced egg, and two types of seared whale, and roll from the front

Wipe the knife with a wet cloth and cut into pieces about 1.5cm wide, then arrange on a plate and it's done
