Whale sushi rolls

The whale meat is slapped on both the red and white meat. Slice them thinly, then shredded, and slathered to make it smoother.

Make minced eggs. Add the eggs, light soy sauce and sugar in a frying pan, then pour it over low heat. Stir with chopsticks, cook it and turn it into a minced form. Once everything is solidified, remove from the heat and apply a frying pan to ice water to remove rough heat.

Spread the grilled seaweed on the rolls and spread the vinegared rice over the bottom half. Topped with two types of shiso leaves, minced eggs, and whale tataki, roll from the front.

Wipe the knife with a wet cloth and cut it into about 1.5cm wide, then serve it in a bowl and finish.
