This dish is made by sandwiching umes of noshimi lees with a plate-shaped sake lees, then fried with a tempura batter. This menu is recommended as a snack or dessert, as you can enjoy the slight sweet and sour taste of the noshi plum.

How to make it

The sake lees are made of plate-shaped sake. Cut into rectangles of the same size and prepare four pieces.

Cut the noshi plums to the same size as the sake lees in [1] and prepare two slices.

Place the ume plums with sake lees and sprinkle them with a thin layer of flour.

Sprinkle with the basic batter and fry in frying oil heated to 160°C for about 1 minute. Remove the garments onto the net before they are too coloured.

Cut off the edges, cut them into sizes that are easy to eat, and serve them in a bowl to complete the dish.
