Endive and olive shiso leaf paste
Separate the endive into individual slices and place in ice water for a few minutes to remove the bitterness
After a few minutes, drain the endives thoroughly and remove any loose leaves
Arrange the endives on a plate and sprinkle lightly with salt. Drizzle olive oil over them in a circular motion, then place small amounts of shiso paste inside the endives to complete
