Clam Chirashi Sushi

Shredded fried tofu.

Shredd the sweet and sour ginger and mix well with eggs, light soy sauce and sugar to make an egg mixture.

Pour rice vinegar over the rice and mix well.

Heat salad oil in a frying pan and add the egg mixture from [2] to make a soft, roasted egg. To avoid overcooking, transfer to a bowl as soon as it is half-boiled and pour in ice water to cool it down.

Place the rice from [3] on a plate, then place shredded fried tofu, fried eggs, and clam meat, and topped with green seaweed. Serve the other dish in the same way and finish.
