Clam green onion soba

How to make it

Put 50cc of mirin into a pot, heat it, and simmer for a few minutes

Once the mirin has boiled off, add dark soy sauce, light soy sauce, bonito stock, and clams and bring to a boil

Once the clams have opened, turn off the heat and remove them

Remove the meat from the shell. If it is large, cut it into bite-sized pieces

Add the boiled soba noodles to the broth and warm gently, then transfer to a serving dish and top with clam meat and white onions
