  3. Make the hollandaise sauce. Put egg yolk and 1 tablespoon water in a small pot and mix well with a whisk.
  4. Add the butter small amounts, then add pepper, lemon juice and lemon zest in order, and mix until thick.
  5. Place asparagus in a bowl and pour over hollandaise sauce.

White asparagus lemon butter

Ingredients (for 4 people / about 190kcal per person)

  • White asparagus...20 bottles
  • Boiled soup
  • Lemon juice... 1 piece
  • Butter, salt, pepper
  1. Peel the asparagus from the skin that has become blemished and changed color.

  • Green asparagus...appropriate amount
  • Melt... 1 tsp
  • Salt and light soy sauce
  1. Cut off the roots of the green asparagus by 2-3cm, cut it in half and separate it from the tip of the ear.
  2. Add a little salt to an appropriate amount of water, boil the asparagus, bring it into a colander, quench it in cold water, and cut it to a 2cm length.
  3. Add the egg yolk and beaten roast in a bowl and mix well, then add 1 tsp of light soy sauce and mix again.
