Italian cold noodles

Soak the cotton tofu in ice water for about 10 minutes.
Shredded shallots and soaked in ice water to remove the slimy finish. Shredded onions and shiso leaves and soak them in water to remove any moisture.

Place the shredded vegetables in a bowl, add [A] and mix.

Cut the tofu that has been soaked in ice water into three equal parts, place it on a plate, and pour [2] over it. Topped with assatsuki and poured in olive oil and it's finished.
