Stir-fried winter melon and beef with oyster sauce
Peel the winter melon and remove the pith, boil it until it is soft enough to pierce with a bamboo skewer, then cut it into irregular pieces
Heat 100cc of salad oil in a frying pan and pour the seasoned beef over it. Once half cooked, drain the oil thoroughly
Heat 1 tablespoon of scallion oil in a frying pan and fry the seasonings. Once fragrant, add the chopped winter melon, sake, and Chinese soup stock and simmer
Once the winter melon has absorbed the Chinese soup, add the fried beef and the mixed ingredients (A) and stir-fry to evaporate the moisture
Thicken the sauce with water-dissolved potato starch, add diagonally sliced okra, and finish by adding a drizzle of sesame oil
