Shrimp yolk stew

This dish is very delicious with the plump texture of the shrimp and the fluffy eggs.
Since only egg yolks are used, the finished color is very beautiful.

How to make it

Peel the shrimp shell and remove the back cotton. Sprinkle 1 teaspoon of umami seasoning and mix well. Wash this under running water to remove any odor.

Stretch the shrimp streaks and sprinkle generously with cake flour.

Mix the seasonings from [A] in a pot and bring to a boil.

Pour the shrimp with plenty of beaten egg yolk and drop it into the boiling dashi stock from [4].

Once the shrimp is covered in eggs, place on a plate. Add some boiled broccoli and add some color to it and it's done.

  • Mirin
    2 tbsp
  • sugar

  • Light soy sauce
