Asparagus Aioli
Do you just quickly boil asparagus at home? Surprisingly, in Italy and France, asparagus is boiled slowly. This results in a dish packed with the original aroma and flavor of asparagus. Cut off the bottom 4-5cm of the asparagus, remove the stems with a peeler, and boil in salted water. Boil for 4-5 minutes, until the asparagus is slightly pliable when lifted from the center with chopsticks. Once boiled, slowly cool in ice water for at least 3 minutes
