Peel the burdock and, if you are not going to use it right away, soak it in vinegar water
Sprinkle flour on the surface of the udon and coat it with the basic batter
Deep fry in oil heated to 170°C for about 2 minutes. If you put the top of the pancakes in the oil first, they will turn out beautifully
Remove to a wire rack and drain the oil
Place on a paper-lined dish and sprinkle with yukari to taste
